3 Easy Summer Cocktails Anyone Can Make

For me summertime spells cocktails. I know for a lot of you, cocktails are an all year round thing but sitting outside with the sun shining means filling up the ice trays, cracking open the bottle of Pimm’s and dusting off the cocktail shaker

We love experimenting with different drinks and recipes and making variations of the classics.  Rooting around in the alcohol cupboard and finding a forgotten bottle of spirits and saying ” I can work with you”

So here are 3 simple cocktails that are tasty and easy and one that is also a little different. 

  1. Cold Brew Guinness & Baileys Affogato 

This is a tasty indulgent cocktail or after dinner dessert that is perfect for a hot summers day/evening. It’s a bit like a cold Irish coffee. Equal quantities of Guinness and cold brew coffee with a measure or Baileys or Whiskey and a scoop of vanilla ice-cream.  

You can make your own cold brew coffee by adding coffee grounds to cold water and leaving overnight. Just strain the next day and chill. Or you can buy some at your local supermarket. 

Recipe Makes 1

50ml Guinness Draught 

50ml Cold Brew Coffee (chilled) 

50 ml Baileys or 35ml Irish Whiskey 

1 Scoop Vanilla Ice-cream 

Method

In a tumbler add the Baileys, Guinness and the Ice-cream, Slowly pour over the coffee

  1. Frozen Raspberry & Prosecco Daiquiri Makes 4

Here is a take on a classic and with all the recent food trends I’m confident most of you have a blender in your house. I’m also rather sure that after trying this recipe you will always keep a bag of frozen raspberries in your freezer. If you like sweet cocktails this one may not be for you.

Adjust the sugar content to the tartness of the raspberries

Recipe

300 grams Frozen Raspberries 

50 grams Fresh Raspberries ( keep a couple for garnish)

2-3 tbs Honey 

1 tbs Sugar

150 ml White Rum 

25 ml Chambord 

7 Mint leaves (keep four for garnish)

40ml Limes Juiced 

300ml Prosecco or Soda Water

Method

Place all the ingredients except the sugar into a blender and blend till smooth. Taste and adjust the sugar remembering the Prosecco will add some extra sweetness. Pour into a glass with some crushed ice. and top up with 75 ml of Prosecco per glass.

  1. Moscow Mule  

The Moscow mule is a classic recipe that is often forgotten. However, here at DaChi HQ we love a classic, so much so this refreshing beauty is on this year’s deluxe BBQ welcome cocktail. This is such an easy tasty cocktail and a sure thing for you ginger lovers.  

Recipe 

50ml Vodka 

150ml Ginger Beer 

50ml Ginger ale 

Ice 

2 x lime wedges (1 squished)

3 Mint Leaves (slapped between your hands)

Splash of Angostura bitters 

Method

In a glass with ice add the vodka, mint and lime. Add a splash of the bitters. Add the ginger beer and top with the ginger ale.

We hope you enjoy trying these recipes or this short blog inspires you to make your own cocktails. You can spice up your cocktails by using different shaped ice-cubes , different shaped glasses or even funky shaped jam jars.

If you are having friends around you can always make a large jug or pitcher to make things easier.
